1 tin of Scout Tuna (either Garden Pesto or Organic Olive Oil)
1 ripe avocado
1 sheet of Nori seaweed
¼ cup diced cucumber
2 Tbs sliced green onion
¼ cup edamame (cooked from frozen)
2 Tbsp Aioli
Cucumber peels, nori and toasted sesame seeds or togarashi to garnish
In a medium bowl, Combine Scout Albacore Tuna, aioli, diced cucumber, sliced green onion, edamame, and bite size pieces of nori. Stir until gently combined.
Slice avocado in half and remove pit. Scoop out a hole in the middle to fill.
Fill the center of each avocado generously with tuna filling.
Garnish with reserved cucumber and nori and liberal shakings of toasted sesame.
